from SusanKay's Vegan Kitchen

1 1/2 cups of sugar
1/2 cup of cornstarch
2 cups of water
the grated rinds of two lemons
1/2 - 3/4 cup of fresh lemon juice
3 tablespoons of margarine
1 prepared graham cracker pie crust

Combine the sugar, cornstarch and water in a saucepan, bring to a boil, whisk the mixture while boiling for 3-5 minutes until very thick and gummy. Add margarine and stir until melted completely. Remove from heat and add ring and juice, stir to incorporate. Pour into pie crust and refrigerate for an hour or over night.
