5 cups chopped raw vegetables (anything goes)
3 Tab. olive oil and 2 Tab. water
4 cups water
¼ cup raw rice
1 tsp. vegetarian broth powder
1 tsp. dried basil
1 ½ cups soy milk
1 ½ tsp. salt
dash of pepper
Sauté veggies in oil and the 2 Tab. of water in a soup pot until softened a bit. Add in the 4 cups of water, rice, broth powder and basil. Cover and simmer until rice and veggies are tender. Add soy milk, salt and pepper and heat through. Do not boil again.
