Veggie Food For Travelers
by Jim Corcoran
- Hashbrowns with sautéed onions, mushrooms, bell peppers or tomatoes.
- Fresh fruit
- Oatmeal (no milk)
- Grits (no butter)
- Salad Bars (restaurant chains: Souper Salads, Tomatoes, TGIF, Ruby Tuesdays,
etc).
- Side dishes (many good and inexpensive).
- Steamed kale, broccoli, or cauliflower topped with balsamic or plum vinegar
or Bragg’s Amino Acid (carry along on trips!)
- Baked potato topped with salsa, beans (black or baked), or another condiment
such as ketchup or mustard.
- Veggie Burger (vegan) at Ruby Tuesdays (national chain).
- Bean Burger (vegan) at Chilies (national chain).
- Vegetable Fahitas at Chilies (not on menu, but is on master menu for
cooks!).
- Ask the chef to prepare a "special" vegetarian meal for you. Many
times they like a challenge instead of the same old routine and will create
something outstanding!
