Meat Market: Animal, Ethics, and Money

Every generation, a book comes along that reshapes society’s attitudes toward food. Meat Market is such a book, and it offers the most compelling critique of animal agriculture yet set to print. In his talk, Erik Marcus looks at the history of animal agriculture, and charts the decline of its ethical standards. Despite the worsening plight of animals, Erik’s message is hopeful and optimistic. He offers ideas and strategies to combat cruelty that can be embraced by meat-lovers and activists alike. He also shows how easy it is to fill your diet with delicious, healthy, and humanely produced foods.

George Eisman, R.D. is considered one of the nation's foremost educators on vegetarian nutrition. He has served as a faculty member in Dietetics and Nutrition at several universities and colleges and created the first accredited program in Vegetarian Studies. He has worked in a children's hospital, a nursing home and for public health agencies in four states. Eisman has spoken at numerous events and conferences and is the author of two books, The Most Noble Diet (1994) and A Basic Course in Vegetarian and Vegan Nutrition (2003).

Americans are — slowly — turning vegetarian

Vegetarian food sales doubled since 1998, hitting $1.6 billion in 2003. The market is forecast to grow another 61 percent by 2008, according to Mintel, a global market research firm. That growth is giving an extra kick to the expanding business of organic produce and natural foods companies, and forcing mainstream food producers to scramble for a way to love veggies.

PHYTOCHEMICALS Lower Cholesterol As Effectively As Drugs

Researchers have found a compound in the blueberry that lowers cholesterol just as effectively as commercial drugs, with the added advantage of fewer side effects, according to a new study by the U.S. Department of Agriculture.  http://www.healthtalk.ca/blueberries_cholesterol_08242004_2928.php

Want to lower your cholesterol without relying on prescription drugs and without suffering from their side effects? A joint study by the U.S. Department of Agriculture and Canadian nutraceutical producer KGK Synergize suggests that the compounds in orange and tangerine peels may offer a natural alternative for lowering LDL, the "bad" cholesterol. The study, published in the May 12, 2004 issue of the Journal of Agriculture and Food Chemistry, is the first to find the compounds - plant pigments called polymethnoxylated flavones (PMFs), which have been linked to a variety of health benefits - can lower LDL without any effect on HDL, the "good" cholesterol.
