3 SIMPLE AND HEALTHY NICE CREAMS

3 sImple and healthy nIce creams

We all know this summer has been hot, hot, hot and if you are anything like me, you have been craving cool, refreshing treats often. I love to eat my favorite store-bought ice creams just as much as anyone but unfortunately, these ice creams quickly end up on the waistline and I don’t feel good about eating them nearly as often as I crave a treat. Enter nice cream. This is the solution to all of your ice cream cravings.

These nice creams are only four ingredients each, smooth, creamy, and rich, AND super healthy for you! There is no added sugar (except in some of the toppings) so you can feel great about indulging in only the good stuff – ingredients that are good for your health and delighted by your taste buds.

Mango Pineapple

Coconut Vanilla

Chocolate Peanut Butter

start by freezIng your bananas

These recipes will not work without frozen bananas!

Very first thing: choose your recipe, figure out how many bananas you will need, slice them up, put them in an airtight container, and freeze them at least overnight (about 8 hours depending on the temp of your freezer).

Mango pIneapple

IngredIent lIst

  • 2 bananas (sliced, frozen)
  • 2/3 cup mango (cubed, frozen)
  • 1/3 cup pineapple (cubed, frozen)
  • Up to 1/4 cup plant-based milk (choose your favorite kind)

dIrectIons

  • Place all ingredients except the milk in the food processor (or high-speed blender).
  • Process or blend for about 10 seconds to see how juicy your fruit is (this helps determine how much milk you will need).
  • Add your milk slowly, only a little at a time so it does not become too liquid.
  • Blend again for another 30 or so seconds then stir everything around a bit to help break up some stubborn chunks.
  • Keep blending and stirring until the consistency is similar to the image below.
  • That’s it! Scoop out and enjoy 🙂

 

top It off (If you want)

I topped this mango pineapple nice cream with some fresh mango chunks but some other toppings you could try include: fresh berries, hemp hearts, puffed rice, crushed nuts, granola, and so many more. 

Coconut vanIlla

IngredIent lIst

  • 3 bananas (sliced, frozen)
  • 1/2 cup shredded coconut (frozen/chilled if possible)
  • 1/4 cup coconut cream (chilled in the fridge at least overnight)
  • 1 tsp vanilla extract

dIrectIons

  • Place all ingredients in the food processor (or high-speed blender).
  • Blend for about 30 second then stir to break up any chunks (this one will blend more easily than the other because it has more liquid)
  • Keep blending and stirring until the consistency is similar to the image below.
  • Because it is necessary to add the coconut cream for flavors sake, this one will turn out softer than the rest. Just scoop it into an air-tight container and freeze overnight to allow it to firm-up.
  • Take out of the freezer, allow to slightly soften for a minute or two, then scoop out and enjoy!

I topped this coconut vanilla nice cream with some oven-toasted coconut flakes but some other toppings you could try include: dairy-free caramel sauce, crushed nuts, fresh pineapple (Pina Colada nice cream anyone?), and so many more.

  • 3 bananas (sliced, frozen)
  • 1/2 cup cocoa powder
  • 2 Tbs peanut butter
  • Up to 1/4 cup plant-based milk (choose your favorite kind)

dIrectIons

  • Place all ingredients except the milk in the food processor (or high-speed blender).
  • Process or blend for about 10 seconds to determine how soft your bananas are (this helps determine how much milk you will need).
  • Add your milk slowly, only a little at a time so it does not become too liquid.
  • Blend again for another 30 or so seconds then stir everything around a bit to help break up some stubborn chunks.
  • Keep blending and stirring until the consistency is similar to the image below.
  • That’s it! Scoop out and enjoy 🙂

 

top It off (If you want)

I topped this chocolate peanut butter nice cream with some dairy-free chocolate chips and crushed almonds but some other toppings you could try include: more peanut butter or another nut butter, chocolate sauce, small apple chunks, crushed sea salt, and so many more.
